The Order of the Knights is inspired by the most famous French Confrérie and uses a very ancient and refined ceremonial structure. The meetings that the Order organizes during the year (usually one a month) take place under the name of Chapters, during which food and wine topics are discussed and traditional dishes prepared according to authentic recipes and accompanied by the best wines selected by a scrupulous Tasting Commission.
The Chapters are held in the evocative Sala delle Maschere, set up in order to welcome distinguished speakers and for the Investiture Ceremonies of the new Knights, called Postulants.
The Grand Master of the Order, the Masters who compose the Regent Council and the Alfieri, dressed with their typical and traditional costumes, take their place at the table set up with chandeliers, the Great Book of the Order and the branch of vine used during the Ceremony of Investiture. Four bridesmaids in traditional costumes and trumpeters also take part in the Chapters with the group of the Sbandieratori and Musici and receive the procession of the Regent Council in the courtyard of the Castle.
Since its foundation, the Chapters have been held within the walls of the historic Castle of Grinzane Cavour where the Order has its historical headquarter (Unesco Heritage since 2014), in which there is also the O.N.A.F., the Wine and Health Observatory, the U.G.I.V.I. and the Enoteca Regionale Piemontese Cavour founded in 1967, the first in Piedmont and the second in Italy.
