“The Confectioner is a maker of jams, marzipan, biscuits and hundreds of other things made using sugar. …There is no fruit, flower, seed or plant, however good it may be in nature, that cannot be given a more appealing and pleasurable taste, as well as providing to the mind of a gentleman the most beautiful ornament on a table; this art can perform – with sugar itself – every type of design or figure, and even pieces of architecture.” The book is a mine of mini discoveries dear to the country gentleman hidden away inside each one of us.
