Another fine recipe book printed by the Knights with what has now become the annual financial assistance of the Cassa Rurale di Gallo Grinzane bank. In this anonymous 86-page manuscript dating back to around 1822, the authors give advice to cooks (best – as noted in the margin – if they are “Mothers”) on early 19th-century Piedmontese cuisine. The manuscript was dedicated to the Commanding Officer of the Cuneo Division. Enthusiasts and cooks will find countless items of interest in the 497 recipes reproduced here, which the authors present with remarkable clarity.
